Add Good Vegetables To Your Diet, Very Veggie Soup For You

Ingredients

1 tablespoon olive oil

1 medium onion, chopped

6 cups low-sodium chicken stock (more if necessary)

2 hearts of celery, chopped

3 small carrots, peeled and cut into 1-inch pieces

Beefsteak tomato 1 large (or 2 Roma), chopped

1 cup frozen green beans

1 cup frozen peas

Salt 1 teaspoon low-sodium

1 teaspoon dried Italian herbs

1 / 2 teaspoon garlic powder (more if desired)

1 / 2 cup small pasta (small tubes, stars, elbows, etc)

Method

Pour oil into a pot of soup. Add onion and fry for two minutes. Add all vegetables and seasonings. Cover, bring to a boil, reduce heat and simmer for 20 minutes. Add pasta Tibet.
